TECHNOLOGICAL , CHEMICAL AND BIOLOGICAL STUDIESON FENUGREEK SEEDS( Trigonella foenum graecum L . )

Abstract
The gross chemical composition of fenugreek seeds either raw , roasted ( at 150ْ for 1 hour ) or germinated for 5 days were analysed . The protein , total lipids , crude fibers and ash contents were 25.32,25.63 and 25.20%,9.84,10.42 and 9.59% ; 14.87,15.72,and 13.65% , and 7.62,7.82 and 7.17% for raw , roasted and germinated fenugreek seeds respectively . The fatty acids found in raw seeds were : Myristic , Palmitic , Stearic , Oleic , Linoleic , Linolenic , Arachidic and Behenic while , the fatty acids Nonylic and Capric appeared only in rosted and germinated .
