تم دراسة تأثير زيت الحبة السوداء في مستوى بعض المركبات الاستقلابية في دم الجرذان المخبرية, والتي شملت قياس تركيز سكر الدم والشحوم الثلاثية والكوليستيرول الكلي بالإضافة إلى تركيز كل من الكوليستيرول السيء منخفض الكثافة(LDL) والكوليستيرول الحميد عالي الكثافة(HDL), ومقارنتها مع بعض الليبيدات المدروسة وهي زيت الزيتون وزيت فول الصويا والدهن الحيواني. وتبين من النتائج أن زيت الحبة السوداء يعمل على خفض تركيز السكر في الدم وبشكل معنوي مقارنة مع الليبيدات الأخرى, حيث بلغ تركيز السكر عند مجموعة الجرذان المخبرية المغذاة على الوجبة الغذائية الحاوية على زيت الحبة السوداء 101±3.61 ملغ/100مل, كما أدى أيضاً إلى خفض تركيز كل من الشحوم الثلاثية والكوليستيرول الضار منخفض الكثافة , وساعد على رفع تركيز الكوليستيرول الحميد عالي الكثافة 53.2±1.93 ملغ/100مل في الدم بالمقارنة مع باقي الليبيدات المستخدمة في البحث ER -
