Manufacturing nutritional mixtures for children from local plant resources and studying their nutritional values

Abstract

The present study aimed at manufacturing infant food to meet the needs of children in this age group, relying on local agricultural products (rice, cowpea and mung bean) and exploiting the availability of these raw materials and the cost of producing ready-to-eat canned foods. The child is rich in proteins of high biological value, which contains the essential amino acids necessary for the child, as well as the energy needs and nutritional value of the child at this stage. attended 18 food mixes and different mixing rates so that the mixture gives a protein ratio of up to 20% , After the sensory tests, the food mixture (14) containing rice, cowpea and cattle was selected with a mixing rate of 20%, 30% and 50% respectively, and food mix (17) containing rice, cowpea and cattle, 30% and 30% Respectively for food preparation. The results of the chemical analysis showed that the mixtures (17 and 14) contain moisture 70.0 - 71.7% and high content of carbohydrates 77.25 - 77.35%, respectively.
